The chicken was flavourful but the veggies were the real star. I added caramelised onion and spinach...I didn't have any asparagus. Smoked salmon and horseradish is an absolute winning combo, then add a creamy potato salad to the mix and you have summer on a plate. Bring large pan of salted water to boil. I used red grape tomatoes, and baby bella mushrooms. Beautiful vibrant green colour. Incredibly quick yet elegant enough to serve to guests. We loved the combination of sweet pears and bitter radicchio with the cheese. Easy to make and tastes great. I added a tablespoon of creme fraiche to the chicken mixture. We didn’t change anything and didn’t have to season afterwards either. I think next time I might add a bit of white wine to reduce just before the cream is added, and cut back the water by the same amount just a bit to give a little more depth of flavor. Next time I might add some crumbled bacon. On my electric stove, my two 8 ounce pounded breasts needed five minutes per side- 10 minutes total on medium heat (pink inside at 6 total minutes).
